Keta ikura salmon roe is the most popular wild Alaskan salmon roe. People also recognize it as chum salmon ikura, keta salmon roe, or keta salmon red caviar. Japanese sushi restaurants commonly use this type of ikura caviar, but home chefs also include it on their plates.
Ikura is a lightly salted salmon roe, separated from the roe skein and flash frozen for maximum freshness. The history of ikura dates back centuries in Japanese culinary culture.
Originally, ikura was not specifically salmon roe but referred to the roe of various fish, including salmon. People typically cured it using techniques like marinating in soy sauce or brining with salt to preserve it.
Salmon eggs have become more popular over the years. This is especially true in the 20th century, because of improvements in fishing and processing methods. These advancements have contributed to the increased popularity of the salmon roe. People were often eating salmon eggs, especially in salmon roe sushi, and the name ikura became a synonym to salmon roe.
Today, ikura remains a cherished ingredient in Japanese cuisine and beyond, appreciated for its unique flavor and texture. Its journey from a traditional preservation method to a beloved delicacy reflects the rich culinary heritage of Japan.
Salmon caviar is also popular in Russia, eastern Europe and in the Caspian Sea region. The name ikura actually comes from the Slavic word "ikra", which means a fish egg or fish roe. In Russia you can often find ikura served with scrambled eggs, sour cream, or with special pancakes called "bliny".
Our ikura caviar is produced by Copper River Seafoods in Cordova, AK, with over 20 years of salted ikura processing.
OUR FISH SOURCE
Our wild Alaskan keta salmon roe and Alaskan sockeye salmon roe are harvested from fish caught exclusively by small boat Alaskan fishermen in the wild Prince William Sound fishing district just outside of Cordova, Alaska. The fishing season starts in early June and ends in late July.
The men and women in our fleet are dedicated to the best handling practices, such as bleeding every fish immediately after it comes out of the water, using slushed ice or refrigerated sea water to minimize the pressure on the meat and keeping their fishholds at 32 – 36 degrees Fahrenheit to maximize the shelf life of the product while they transport and deliver their catch to our processor - Copper River Seafoods.

FROZEN GUARANTEE
Frozen shipments are shipped with ample dry ice to sustain the shipment duration. The dry ice is sublimating during the shipping process so your shipment may arrive with no ice left in the box, but it is good and safe to consume as long as it remains frozen.
If your shipment arrives partially thawed on the edges, it is still good and safe to consume. If the frozen products arrive completely thawed out or damaged in any other way, please take pictures and/or videos with as many visual details as possible and contact us for a possible refund or reship.

ASK YOUR FISHMONGER
How do I eat caviar?
If you really want to appreciate the taste and texture of caviar, use a non-metallic spoon to scoop a little bit, put it on your tongue and pop it against the roof of your mouth.
Otherwise caviar is best served as a cold topping or condiment. The options are limitless - you can put it on sushi, mix it into a rice bowl, put it on top of your cooked salmon fillet, mix it with scrambled eggs, eat it with smoked salmon or lox, or eat it with bagel and cream cheese.
You can find more caviar eating tips in this blog post: Ikura caviar: What's the difference between Sockeye and Keta Salmon Roe?
Is caviar good for you?
Yes, caviar is incredibly good for your cardiovascular and brain health, because it’s packed with essential nutrients.
It contains high levels of omega-3 fatty acids DHA and EPA, protein, phosphorus, selenium, potassium, zinc, and vitamins B12 and D.
It also contains astaxanthin, which is a potent antioxidant 6,000-times more powerful than vitamin-C.
What’s the difference between keta, sockeye and pink salmon ikura red caviar?
They’re all salted salmon eggs (roe), but vary in size, color and flavor. Keta salmon ikura has the largest diameter eggs, with bright orange color, gentle pop, and milder, sophisticated taste.
Sockeye roe is the smallest of the three, with bright red color thanks to the high content powerful antioxidant astaxanthin.
It has a strong salmon-forward flavor. Pink roe is in the middle with size, but has a very distinct caviar flavor popular amongst ikura fans and professional chefs.
Is the fish farmed or wild?

Yes! All of our orders are 100% guaranteed to arrive frozen. If there is no ice left in the box upon delivery, but the fish is still frozen ( even if it’s a little soft on the edges), everything is ok and safe to eat (or put in the freezer).
If your order got delayed in transit and arrived completely thawed out, please let us know immediately and send us pictures. We will work together to rectify the situation.
