Since salmon spoils quickly after being caught, flash-freezing locks in nutrients and texture for months. Many deli-case fillets were previously frozen and thawed for display, making properly frozen salmon the better option. Blast-freezing kills parasites, ensuring safety for raw consumption. Vacuum-packed frozen salmon is the best choice for quality and freshness.
