Our halibut is caught exclusively by small boat Alaskan fishermen in the Area - E fishing district in Alaska.
The men and women in our fleet are dedicated to the best handling practices, such as bleeding every fish immediately after it comes out of the water, using slushed ice or refrigerated sea water to minimize the pressure on the meat and keeping their fishholds at 32 – 36 degrees Fahrenheit to maximize the shelf life of the product while they transport and deliver their catch to our processor.

STANDARD SHIPPING:
Your order will ship via UPS the Monday, Tuesday or Wednesday after you place your order. Your fish will arrive Tuesday - Thursday depending on your location. The orders are shipped from our hub in Milwaukee with dry ice for transit. Don’t worry, ALL fish are from Alaska! We do quality control and reduce your shipping cost by shipping from Milwaukee.
EXPEDITED SHIPPING:
If you pick expedited shipping during checkout, your order will be shipped within one business day with overnight delivery. With the exception of our shelf stable products, we are not able to ship on Fridays.
PICK-UP:
You will receive an email when your order is ready with instructions on how to coordinate your pick-up date, time, and place.
FROZEN GUARANTEE
Frozen shipments are shipped with ample dry ice to sustain the shipment duration. Frozen products need to be put in the refrigerator for immediate consumption or in the freezer for future use shortly after delivery. The dry ice is sublimating during the shipping process so your shipment may arrive with no ice left in the box, but it is good and safe to consume as long as it remains frozen.
If your shipment arrives partially thawed on the edges, it is still good and safe to consume. If the frozen products arrive completely thawed out or damaged in any other way, please take pictures and/or videos with as many visual details as possible and contact us for a possible refund or reship.

Wild Alaskan Halibut Ceviche
The most amazing show stopper you can bring to any hot summer gathering- HALIBUT CEVICHE.
Makes: 4 servings
Prep time: 30 minutes
Marinade time: at least 30 minutes, up to 2 hours
Ingredients
1 pack of wild Alaskan halibut nuggets or 2 halibut fillets, thawed
2 medium-sized tomatoes, diced
1/2 of red onion, diced
½ cup fresh cilantro, diced
1 small jalapeño, diced
½ cup fresh-squeezed lime juice
½ cup fresh-squeezed lemon juice
1 ½ teaspoons salt (add more to taste)
2 avocados - diced into the ceviche, or sliced and served on the side
Optional: cucumber and/or bell pepper
Directions
1. Blot excess moisture from thawed halibut with a paper towel. Place the halibut, onion, tomato, cilantro, jalapeño, and avocado (if adding) in a medium mixing bowl.
2. In a small mixing bowl, combine lime juice, lemon juice, and sea salt. Pour the mixture over the raw halibut mixture.
3. Stir gently until combined. Cover and place in the refrigerator.
4. Allow the halibut to marinate for 30 minutes to 2 hours until the ceviche is chilled, and the halibut is opaque and "cooked" through.
5. Serve the wild Alaskan halibut ceviche with tortilla chips, plantain chips, or sliced cucumbers.

Poached Wild Alaskan Halibut in Thai Coconut Curry Broth

Ingredients
2 tablespoons olive oil
24 ounces fresh spinach
Salt and pepper to taste
3 shallots, diced
1 tablespoon Thai red curry paste
1 ½ cups chicken broth
1 (14 ounces) can of coconut milk (can use light)
½ teaspoon sugar
4 wild Alaskan halibut fillets (6 oz each)
¼ cup cilantro, plus more for serving
¼ cup green onions, sliced on the bias, plus more for serving
1 lime, juiced (cut the other half into wedges for serving)
For serving
2 cups steamed jasmine rice
Lime wedges
Directions
Prepare the Spinach
1. Heat 1 tablespoon of olive oil in a deep skillet over medium heat.
2. Add fresh spinach to the pan and season with salt and pepper.
3. Toss the spinach until it begins to wilt. Remove and set aside.
Prepare the Curry Broth
1. Wipe the pan, add another tablespoon of olive oil, and sauté diced shallots until tender.
2. Add Thai red curry paste, chicken broth, coconut milk, and sugar.
3. Bring to a simmer, reduce heat, and let the curry reduce by half. Adjust seasoning.
Poach the wild Alaskan halibut
1. Lightly season the wild Alaskan halibut fillets with salt.
2. Place fillets into the broth, spooning some over the top.
3. Cover and poach for about 5 minutes until cooked from medium-rare to medium.
Assemble the Bowls
1. Distribute sautéed spinach in serving bowls.
2. Carefully place a halibut fillet on each bed of spinach.
Finish the Curry Broth
1. Stir in cilantro, green onions, and lime juice to the curry broth.
2. Ladle the broth over each halibut fillet.
Garnish and Serve
1. Garnish with fresh cilantro and green onions.
2. Serve with steamed jasmine rice, if desired.
3. Accompany with lime wedges for an extra burst of flavor.

Pistachio Pesto Prince William Sound Halibut
Experience perfection with Pistachio Pesto Prince William Sound Halibut.
Ingredients
1 cup fresh basil leaves
1 cup fresh baby spinach (or substitute arugula for a peppery kick)
1/4 cup shelled roasted pistachios
1/4 cup parmesan cheese, grated or shredded
2 cloves garlic (finely minced)
2 tsp lemon juice
1 tsp lemon zest
1/4 cup olive oil (more if needed)
1/8 tsp red pepper flakes (optional)
Directions
1. In a blender or food processor, blend basil, spinach, pistachios, parmesan, and garlic until roughly chopped. Add olive oil gradually, blending to a smooth paste.
2. Stir in lemon juice, zest, and salt, pepper to taste.
Prince William Sound Halibut
Ingredients
2 Prince William Sound Halibut fillets
salt to taste
pepper to taste
garlic powder (optional)
Directions
1. Preheat oven to 400 degrees
2. Pat halibut dry and season to taste with salt, pepper, and (optional) garlic powder.
3. Spread Pistachio Pesto over halibut and place in a lightly oiled baking dish or on a parchment-lined sheet pan and bake for about 14 minutes, depending on the thickness of the halibut. If you have any doubt, err on the side of less time. I use an instant-read thermometer and limit my halibut dishes to 120-125.
4. Finish the pesto-baked halibut with a little parmesan, and serve with your favorite sides. I like Rosemary/Thyme seasoned roast potatoes with roast cherry tomatoes and Brussels Sprouts or broccoli.

What's the difference between halibut steaks and fillets?
Similar to salmon steaks, halibut steaks are cut perpendicular to the backbone, while fillets are cut parallel to the backbone.
That means you always have a bone in halibut steaks, but halibut fillets can be boneless. The steak cut is also not practical when the fish is too big.
Does halibut taste 'fishy'?
We like to say that “halibut is the white fish that ruins every other white fish” because it is so darn good.
It literally does not taste like fish. It is super “steaky” and mild in flavor which makes it a popular choice on restaurant menus.
What's the best way to cook halibut without it falling apart?
Halibut is not like haddock or walleye and does not fall apart when cooking. It is a very steaky fish and maintains it’s structure when grilling, baking, pan-searing or air frying.
Because our fish is sushi-grade, we always recommend to cook it for less time than you think, so as not to dry it out. Fish also continues to cook once it's removed from the heat source.
Why is halibut so expensive? Is it worth the money?
Yes, it is worth the money! It’s very rare to find a product that is absolutely delicious, while being good for you at the same time.
Fish like halibut are recommended by doctors and nutritionists in almost any diet! And cooking halibut is very easy - you can use any of your favorite cooking methods and halibut will always come out tasting great.

Why is the fish frozen? That's not how it looks in the grocery store case.
Flash freezing fish right after catch is the only way to preserve its quality. Fish in general have very short shelf life. They start to spoil right out of the water. Bringing fish from Alaska to the Lower 48 without freezing can negatively affect the appearance, structure and taste.
It's a seasonal fish so you need to stock up in the summer to enjoy it year-round. Beware the thawed piece of wild Alaskan fish for sale! As your butcher if it was previously frozen and how long it’s been thawed.
Flash frozen is actually the freshest way to go!
How long will my fish stay fresh?
When properly stored in your freezer, our vacuum-sealed fish maintains peak quality for up to a year. Once thawed, use within 2-3 days. We include detailed storage and thawing instructions with every order.
Is the fish farmed or wild?
Everything we sell is 100% wild caught. We only sell Alaskan seafood and fish farms are not legal in Alaska.
Who do I support when I buy your fish?
Small boat fishermen in south Central Alaska, our processors in Cordova and Anchorage and our family in Menomonee Falls, Wisconsin.
When will I get my order?
Your fish will be shipped the Monday or Tuesday after your order is placed. You will receive your fish 1-2 days after shipping. We ship out of our hub in Milwaukee. Don’t worry, all of your fish is from Alaska! Adra’s originally from WI.
