If you're cooking Paleo, the quality of your protein matters. Wild Alaskan halibut is lean, mild, and pairs beautifully with simple, whole-food flavors - no fuss, no fillers.

This super-easy sheet pan recipe is ready in 30 minutes and hits all the right notes. Bright lemon, fragrant herbs, tender asparagus, and fish that does the heavy lifting on its own. Try it this week for dinner.

Ingredients
For the halibut:

  • 4 halibut filets (about 5–6 oz each, fresh or thawed)
  • 2 Tbsp avocado oil or melted ghee
  • 1 tsp garlic powder
  • 1 tsp dried thyme or Italian seasoning
  • 1 tsp lemon zest
  • 1 lemon (half for juice, half sliced into rounds)
  • 1 tsp sea salt
  • ½ tsp black pepper

For the Asparagus:

  • 1 bunch of asparagus (trimmed)
  • 1 Tbsp avocado oil
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • Optional: ¼ tsp crushed red pepper flakes

Instructions

1. Prep the Oven and Pan:

  • Preheat oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper.

2. Prepare the Asparagus:

  • Trim the woody ends off the asparagus.
  • Place on one half of the sheet pan.
  • Drizzle with 1 Tbsp avocado oil, and sprinkle with salt, pepper, and red pepper flakes if using. Toss to coat evenly.

3. Season the Halibut:

  • Pat the halibut filets dry with paper towels.
  • In a small bowl, mix together garlic powder, thyme, salt, pepper, and lemon zest.
  • Brush or drizzle halibut with 2 Tbsp avocado oil or melted ghee.
  • Sprinkle seasoning mix evenly over each filet.
  • Place halibut filets on the other half of the sheet pan.
  • Add a few thin lemon slices on top of each filet.

4. Bake:

  • Bake everything together for 12-15 minutes, or until halibut flakes easily with a fork and asparagus is tender-crisp.
  • Optional: Broil on high for the last 2 minutes for extra color (watch closely to prevent burning).

5. Finish and Serve:

  • Squeeze fresh lemon juice over the halibut and asparagus before serving.
  • Plate halibut with a side of roasted asparagus and extra lemon wedges.
